Just looking at your chickens can tell you an awful lot about your chickens. Look specifically at their comb and wattle. Is it a nice red color or just pale pink ? A nice red color means your chicken is not dehydrated or malnutritioned, for the most part. If its pink or a poor color then your chicken is not as healthy as they need to be. If you think its dehydration then pull on the skin on their shank and see if it bounces back quickly or takes a bit of time. If it takes a bit of time then dehydration is likely the culprit. But they definitely need attention.
Also the first place you're going to see issues with cold in your chickens is the wattle and the comb. It may turn a more pale color and these are the locations to worry about frostnip or frostbite.
So there's a quick thing to look at on your chickens that can alert you about their wellbeing.
